Just briefly on.....Corn

We have just returned to Mexico City from Minnesota and already I am missing Minnesota. As you can imagine we ate our fair share of corn on the cob while we were back in Minnesota, it was sweet and tasty. Dylan really liked to munch the corn off the cob. Dylan and I visited the supermarket on our first day back in the D.F. and I had plans to cook a summer braised chicken dish that included corn. When I spotted the corn on the cob still in the husk I thought we would give it a try. Let's just say that I had been warned about the corn. So we got home and I was preparing our braised chicken. I diligently washed the corn and then cut it off the cob. Then, before throwing it into the pot, I decided I better have a quick try.....Ugh! This was not sweet corn, it was more like feed corn. Lesson learnt!! Lucky I had some frozen corn which is more like the sweet corn we are used to.
